cut sunflowers

I am trying to locate the name and seeds of sunflowers that one frequently sees at sidewalk flower vendors. The central disk is about 4-5" dia., surrounded by short yellow petals. The central disk is an incredibly rich, dark, velvety brown. Any suggestions as to what it is and where to find it? Thanks.
