Chives, Costmary, Lemon Balm, Lovage, Marjoram, Mint, Rosemary, Thyme, Sage and many more. These are the perennials (for zone 6) I can think of right now.

I also like the idea of planting herbs and cooking with them fresh. also very nice in salads.
Lavender I found, grow in very warm and very cold areas. and you get a lot of different kinds, even a yellow one.
