Do I need to cut back herbs?

I am just entering the world of herb gardening. My herbs are growing faster than I can use them. Do I trim them or just allow them to go?

Hi Roger,

Unfortunately you don't say what herbs you are growing, but for most, the young and tender leaves are the best ones for cooking, so it's best to continually pinch them. Pinching also helps keep them bushy. This site might give you some idea of how many herbs grow. Most of these are edible herbs.

What kind of herbs do you have? I just got done drying out my first bit of oregano and thyme. Today I just clipped and cleaned cilantro, sage and rosemary for drying.
I cut mine back in the mornings before the heat gets to them, I also make sure they are not flowering. I cut those off. Trimming keeps them healthy and for me. I use them fresh in the summer time and dry them for the winter use in the kitchen.
