Hi Lapetitepunk,
Without more info about where in the world this plant grows and if it's in the wild or in the garden I can't say exactly which species of Centaurea it is.* There are 350 to 500 different species of them.* They are herbaceous thistles.* They are sometimes called mountain bluet, perennial cornflower, mountain cornflower, knapweed, or mountain knapweed.* There are even more common names for them.

When weeding, the best way to make sure you are removing a weed and not a valuable plant is to pull on it. If it comes out of the ground easily, it is a valuable plant.
hi! i live in the area of granby in quebec, canada... if that helps.
thanks for getting me closer to the answer!
If it's growing in your garden, it could be one of many different ones.* If it's growing in the wild I have some links to Canadian wildflowers or you could try a google search with terms such as:
wildflower + Quebec
thistle + Quebec
Centaurea + Quebec
Let me know if you would like the links I have as there are quite a few.
