Cilantro in Wisconsin

Hello.I need help and can't find any! I live in Wisconsin and we are trying to grow cilantro from the 3" seed plants bought from a nursery. Within 1 week it was 2 feet tall. I now understand it went to seed and am planning on harvesting the seeds. But, can I just cut the plant to the ground and will it grow again? Thanks for any help!
