Herb spacing

What is with the guidelines for final plant spacing on the backs of seed packets?? I live in rural Ohio and the garden space Grandma and I have is good but not great (clay!)... I cram those rows FULL of seeds and I am rewarded with thick bursting masses of herbs healthy and full of vigor. Some of these things are talking 12-18 inches between plants, mine are mere centimeters apart. FYI, I am growing chamomile, dill, basils galore, and arugula. Did I just pick the good ones? Are there some that actually are sensitive to being placed closely?
