Sounds like you have slugs. They come out at night and eat your hostas. Hostas are like candy to slugs. Don't pour the beer over the hostas. Put it in shallow containers under the hostas and the slugs will drown (happily) in it. You have to replace it regularly, so it can get expensive. You can also purchase non-toxic slug repellents at garden centers.
