I want to shape up my Yucca plants don't know how to trim them

We have two massave Yucca Plants. I love them but noticed that the lower leaves are dead and that they have sort of long trunks laying on the ground. I wondered if it would be okay to cut them down to the ground this fall and sort of re-start their growth. I don't want to kill them I just want to give them better shape. Any advise on this?
