Lavendar is growing wildly!

: Please help!  My lavendar is not growing straight up and the beautiful blooming buds are growing crookedly in different directions.  I've noticed the roots of the plant are growing across the ground instead of vertically.  Should I tie string aroung the base to bunch them together so they will grow upright?  When should I trim the stalks with the beautiful buds, some are growing rather tall! Also how often should I water.  They get direct sunlight in the middle of the day, and are planted in soil.
