Sounds like woodchucks to me. they use to do that to my winter squash, and boy what a pain! They make a knick here and there on my fruit. Put a strong cage around your pumpkins, because woodchucks are strong critters, and can push it over. A few green steaks about $200 each, and some fence for making a cage.
