To my knowledge the variegated variety isn't as strong of a plant due to the lack of chlorophyll. This causes it to focus it's energy to simply surviving instead of reproducing. I have seen a few blooms on a variegated hydrangea and they didn't seem to be that impressive. They were real faded out pink, almost white. And against the variegated foliage you don't even notice them. It is a plant meant to be admired for its foliage.
