Looking for a nice shaping tree about 25-30' only.

I am looking for some advice on a nice shaped tree that gets only about 25-30 feet tall. I don't want the leaves to drop during the winter or summer time. We want to put several against a brick retainer wall that is at least 5' tall. We will eventuall plant small shrubs and flowers between them. The sun goes east(a.m.), and west (p.m.). We live where the climate is 40-70 degrees all year round. Humidity is sometimes 100% - 40% all year long.
I really appreciate any ideas please.
