Hi Ollie,
Don't know if you've found the reason for the sap running on your flowering plum, but I did a search at www.google.com and put in quotes with a plus sign like this: "plum tree" + "sap" and got almost 800 hits. Here's some that might be helpful. Scroll down for the last one on this first site.
