All three actually. Assuming you are growing the purple ones, choose a dark one that is firm, not spongy. If it has stopped growing it is probably ready, but as far as size goes I like mine a little on the smaller size. That is the benefit of growing your own you get fresh veges and can pick them at the stage of ripeness you prefer.

Do not put eggplants in the refridger, use them as soon as possible after picking.
