So if you had hot then cold weather then hot they could have assumed that it was time to seed. Other factors such as water, sunlight etc can cause onions to seed prematurely. Just cut them off as soon as you see the seed stalk; the onions will not get big but can still be used for fresh onions. They will not keep well over winter either. :-<
