Unfortunately you don't say what herbs you are growing, but for most, the young and tender leaves are the best ones for cooking, so it's best to continually pinch them. I am just entering the world of herb gardening. My herbs are growing faster than I can use them. Do I trim them or just allow them to go?
What kind of herbs do you have? I just got done drying out my first bit of oregano and thyme. Today I just clipped and cleaned cilantro, sage and rosemary for drying.
I cut mine back in the mornings before the heat gets to them, I also make sure they are not flowering. I cut those off. Trimming keeps them healthy and for me. I use them fresh in the summer time and dry them for the winter use in the kitchen.
