Pizza dough for one pizza, purchased or home made.
Feta cheese, crumbled
One thinly sliced red onion, if desired
Extra-virgin olive oil
Preheat oven to 400 F. Stretch out the pizza dough. If the dough
gets too elastic and won’t stay stretched, refrigerate it for
about 10 minutes and try again. Meanwhile, thinly slice the tomatoes.
When the dough is ready, arrange the tomatoes on the dough –
closely if you have several green tomatoes, spaced out if you only
have a few. If you’re using onions, add those on top of the
tomatoes. Scatter feta cheese, thickly or thinly as your taste dictates,
on top of the pizza. Sprinkle or spray the pizza toppings with olive
oil. Slide the pizza into the oven and bake about 15 minutes, or
until the edges are golden to light brown. Remove from the oven,
cut the pizza into slices, and enjoy.
