Tomato Butter – Heirloom Tomato


10 pounds of ripe tomatoes, skinned
4 pounds granulated sugar
3 pounds sour apples, sliced fine
1 quart of vinegar
1/4 ounce mace
1/2 ounce ginger
1/4 ounce whole cloves
1 ounce stick of cinnamon

Put spice in a thin bag; put all the ingredients together, and boil
until quite thick, stirring frequently to keep from burning.
