| Ingredients: This can be served as a side salad or as a relish on grilled burgers or chicken. 4 medium red and yellow (2 of each) heirloom tomatoes, diced 2 cloves garlic, crushed 1/2 red onion, thinly sliced into strips 2 tablespoons minced fresh parsley 1 tablespoon extra virgin olive oil 2 tablespoons lemon juice 1 teaspoon balsamic vinegar 1/2 teaspoon yellow mustard seeds, crushed 1/4 reaspoon ground coriander 1/4 teaspoon kosher salt 1/4 teaspoon freshly ground pepper Preparation: (You can get rid of the seeds and watery juice from the tomatoes by cutting them in half and gently squeezing them while pushing the seeds and juice out with your fingers). Place a toothpick through the garlic cloves so they will be easy to remove later. Combine the tomatoes, garlic, onions and parsley. Whisk together the remaining ingredients and pour over tomatoes. Stir gently and let rest 1 hour before serving. Remove garlic just before serving. | |
